2 cockerels 1 pullet and 6 chicks

Yes, keep one, at most, and maybe neither. Cockerels are easier to raise when you have mature birds also, so the boys get some training from the adults (think having them eat humble pie).
See how your cockerels behave, with you and with their hatchmates, if you want to keep one, and be ready to sort things out immediately if necessary.

Just this morning two of my cream legbars sounded like they started to crow :(. I was almost certain they would be female because they have a salmon colored chest which I thought was a giveaway for female cream legbars...unless they aren't a full breed? not sure how that works.

Based on the photos: yes, those two Legbars are males.

No, they don't have the salmon colored breast that people talk about in Legbar hens.

In general, male Cream Legbars have a lot more white than the females, along with less brown and maybe a bit more black.

This article has several photos of Cream Legbar females. It doesn't seem to have any pictures of a male Cream Legbar past the young chick stage, just a white one. But males look pretty much like your two.
